me oh my it's paleo pad thai...

noodles included! 
How can this be?

gluten, carb, and calorie free... traditional Japanese noodles made from Asian yam
(not to be confused with Tofu Shirataki Noodles)

My inspiration

In pursuit of Paleoness, I made several tweaks to Nirmala's recipe (availability of ingredients was also a factor).

coconut oil in place of peanut oil
red curry paste in place of shrimp sauce
dried walking onions in place of scallions
powdered ginger and no brown sugar
pistachios (gently crushed) in place of peanuts
shirataki noodles in place of rice noodles...
the noodles come packaged in water and have a fishy odor, rinse and drain thoroughly to remove the smell
stir fry in butter
The different flavors and textures in this dish are distinct. Each bite had me wondering, "What makes this so fabulous... is it the sauce, the nuts, the buttered noodles, the cilantro, or is it the way they complement each other?"
